  1. Visual and Sensory Check

Pure jaggery has a natural golden-brown to dark brown colour and a glossy, translucent look when dissolved in water. It should not have an artificially bright or dull white appearance.

  1. Water Test

Dissolve a small amount of jaggery in water. Pure jaggery dissolves almost completely, leaving a brownish, glossy solution without sediment or artificial residue.

  1. Alcohol and Acid Test

Mix half a teaspoon of jaggery with about 6 ml of alcohol and then add 20 drops of concentrated hydrochloric acid (HCl). If the jaggery changes colour to pink, it indicates the presence of artificial colouring, meaning it is adulterated.

  1. Taste and Texture

Pure jaggery tastes distinctly sweet with a slight molasses flavour and should have a firm, but slightly brittle texture. Adulterated jaggery may taste bland or have an off flavour.

While these tests can help you verify the purity of your jaggery, for absolute certainty, lab testing for sucrose content, moisture level, microbial purity, and adulterants is recommended, especially for bulk buying.

Remember, real jaggery does not dissolve completely in water, and it does not have a salty or bitter taste. It may have darker colours, such as dark brown or black, and it should not be stored for an extended period as it may lose its potency over time.
