Homemade Sausage Free of Sugar and Starch Offers a Nutritious Option

In the pursuit of a tasty and nutritious product without carbohydrates, Jeanne Karb, a health-conscious individual who struggled with excess weight, has come up with a unique homemade fried chicken recipe. This recipe, which substitutes Hibiscus tea for beet juice, offers a pinkish hue without the added sugar found in traditional chicken breast recipes.

The recipe calls for dividing the mixture into two parts. One portion is pressed into a loaf pan and baked at 180°C for 40-50 minutes until firm, resulting in a dense, baked version. The other portion is pressed into a plastic bottle (with the top cut off) and refrigerated overnight, creating a soft, pate-like consistency.

The unique twist in this recipe lies in the use of gelatin (1-2 packets of 10g each) instead of xanthan gum for binding. Hibiscus tea (or beet juice) is added for color. If you don't have a blender, finely chop the meat and mix with gelatin by hand.

The cooked meat is then blended into a smooth paste for the baked version, while the chilled version can be served as a delicious pate and spread on bread. The resulting homemade chicken is a versatile base for chicken recipes, sandwiches, salads, or even okroshka.

Homemade fried chicken can be a healthier alternative to store-bought chicken breast recipes, as it does not contain added sugar and starch. Store the finished chicken in the fridge for up to 5-7 days.

Serve the chicken with lettuce, tomatoes, or on keto bread. This chicken is perfect for sandwiches or Keto breakfast. Baking or chilling the chicken mixture in a mold creates different textures, offering a variety of options to suit your taste.

Interestingly, Jeanne Karb began making her own chicken as a means to control her diet and lose weight. This recipe is a testament to her commitment to health and flavour, and it's a great way to enjoy a tasty and nutritious product while avoiding carbohydrates.

However, it's important to note that the mixture should not be cooked in plastic due to harmful substances released during heating. Always use a suitable mold or container for cooking.
